I decided that I should put a recipe on my blog since I've been making a few recently.
125 Grams butter (softened)
3/4 Cups of sugar
2 Eggs
2 Cups of banana ( ripe and mashed- about 5 large)
1 Teaspoon baking soda
2 Tablespoons of milk ( heated )
2 Cups of plain flour
1 Teaspoon of baking powder
1. Heat oven to 180 degrees and grease/oil spray 20cm round cake tin.
2. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
3. Add mashed banana. Stir baking soda into hot milk and add to creamed mixture and stir well.
4. Sift flour and baking powder. Fold into mixture.
5. Turn into greased cake tin. Bake at 180 degrees for about 50 minutes or until cake springs back when lightly touched.
6. Leave in tin for 10 minutes before turning onto wire rack. When cold ice with lemon or chocolate icing..
